Summer produce is plentiful as ever. I love going to my farmers market and see loads of local vegetables and fruit. I still miss my LA market but my new one is definitely showing a lot of promise. Sadly it will be closing in a few months, but let’s not think about that! One of my favorite summer finds is zucchini. You can find zucchini for cheap in the summer! Last time I was at the market with my mom she asked if I remembered eating her zucchini apple slaw as a kid but I did not. A few days later she asked if I thought I could make it paleo. My automatic response is always yes. I’m pretty convinced almost anything can be made paleo. Yesterday my mom probed if I could make the zucchini slaw. So I did and it is definitely a new favorite for me! This slaw is so easy and delicious. With the remaining month of summer and Labor Day in the coming weeks, this cool side dish is perfect for late season barbecues and a quick dinner side.
So I started watching Game of Thrones. Yes I am really far behind. This show is a little scary although I do scare easily. Blood isn’t really my thing either, but hey I want to see what the hype is all about. I like it so far but we will see how much I can cram in before my sister cancels her HBO subscription. Anyone else watch? I am also always looking for good Netflix recommendations!
Ingredients
- 2 cups grated zucchini
- 1 medium apple, diced
- 1/2 cup cream from top of coconut milk
- 2 tsp orange zest
- 1 tsp white wine vinegar
- 1/2 cup zante currants
- 2 tbls sunflower seeds
- pinch of salt
Directions
- Mix all ingredients in a large bowl and chill for 30 minutes to let the flavors meld.

GOT is my favorite! I’m completely obsessed! This slaw sounds delicious! I’ve never heard of using zucchini in a slaw but it’s good in pretty much every application I’ve tried so why not?

Thank you for the recipe. I have a garden full of zucchini and am looking forward to trying it. Netflix recommendation for you….The Killing. The title sounds really bad and I’m not into that stuff but friends couldn’t stop talking about it so we gave it a watch. it is very “brainy” and keeps you guessing. Lots of twists and turns. Just when you think you have figured it out…….nope. Good casting and believable complex characters that are easy to identify with. And there are whole seasons available!
