Apple Cider Vinegar Gummies | Plaid and Paleo

My pork belly finally finished curing and was ready for the smoker yesterday. I used a mixture of hickey and cherry wood that gave the bacon a very unique flavor. I’m so happy how it turned out! I’ll share all of what I did later this week.

This weekend I’ve been teasing these gummies on my instagram. I really wanted to add more apple cider vinegar (ACV) to my diet after reading all the benefits (here, here and here), but I don’t like the overpowering taste. I’ve tried diluting it in water and adding it to smoothies, but I didn’t like either of these. After making strawberry and blueberry gummies the other week, I thought why not put ACV in gummies. These little gummies do double duty. You get the benefits of grass-fed gelatin plus all the benefits of ACV. The apple cider doesn’t completely mask the ACV flavor, but it tames it down significantly even my 4-year-old niece devoured these! Much to my sister’s shock. I have been eating two of these a day to get my recommend dose of ACV. A couple of notes: to get the maximum benefits of ACV you want to make sure you buy the raw version with the “mother.” It will have little string bits and be less translucent. Also make sure you warm to mixture to an easy bubble then removed directly from heat as to not break down the ACV.

I love this idea, but wouldn’t heating the ACV diminish its benefits? Have you found any research on that one way or the other? Just curious.

Hi! I did some research, and there isn’t too much out there. I agree you don’t want the mixture to reach a boil because I thought the same thing about it losing nutrients! You want it to just start to bubble then remove from heat. The biggest part is using raw ACV with the mother. Thanks for the comment! I am going to add some of this info into the post!

I personally would add the ACV after heating the cider and even add it after whisking the cider/gelatin mix for a bit, once it’s a little cooler. I don’t know if heating the ACV is actually bad, but I’d do it this way just in case.

What do you do after you whisk in the gelatin? You pour the mixture into molds? Refridge till it sets?
Yours are those cute flowers. Is that a mold of some kind? I’m confused what you do after you whisk in the gelatin.
    Thanks!

I just tried these, and they’re delicious!! I needed a way to get ACV into my diet. Now I just have to try and not eat them all. Thank you!

How many of those molds (they are 24 pieces per mold?) do you need for this size recipe?

    • vanessa says

      July 31, 2014 at 9:28 pm

I pour them pretty full and they fit perfectly into the 24 count mold!

I’ve never had that happened but I want to help! What kind of gelatin did you use? How long did they set up in the fridge?

  9. Jessica says

The ACV was WAY too strong for me! I don’t know what happened, maybe my molds are too big? Any other suggestions on what else could be used with the ACV? I used raw organic apple juice.

Big molds can make the flavor stronger. I weirdly like the flavor of ACV so I don’t mind it as much, but I think pear juice or orange juice would actually mask the acv flavor better than the apple juice!

Hi Vanessa! I just made these and they are AWESOME! I modified it just a touch by adding a little agave (def could have left it out). I love the ACV flavor. Going to try them with pineapple juice next time. Thanks for all the great recipes!!!

BTW, pineapple will not set up because it has bromeline or something like that. you can’t use it to make regular jello either. the enzymes in it won’t let it gel.

I love this idea! It sounds like it can provide that fun ‘sour’ flavor that you get with a lot of gummies. And if you haven’t tried ACV in a mug of warm water with some raw honey…it is a divine night-time ‘tea’. The honey neutralizes the ACV flavor.

    • vanessa says

      August 13, 2015 at 7:06 pm

Oo I will have to try the ACV with honey. That sounds amazing!

    Hi,

I made these with Agar instead of gelatin and they came out great! I have a quick question, how long do these last in the fridge?

That’s awesome! Mine last for about a week in the fridge!
