If you follow me on Instagram, you know I love making hard boiled eggs in my Instant Pot. My favorite things to do with these hard boiled eggs is to make Instant Pot deviled eggs. Over the last few years, deviled eggs have become one of my go-to snacks on paleo when I am hungry. I love coming up with new deviled eggs flavors and trying unusual flavor combinations or even repurposing some of my favorite flavors into a new form! Instant pot deviled eggs are so easy to make, and the best part- the shells are so easy to remove. One of my least favorite things to do is peeling hard boiled eggs. I have tried all the tricks, and instant pot hard boiled eggs are the easiest eggs I’ve ever peeled!
So I have been traveling a lot these past few weeks. Tomorrow I jet off to Las Vegas for a much needed girls vacation! I am super excited to be reunited with my friends who I met in Europe a few years ago. I am pumped to be going to my first Las Vegas show, Cirque de Soleil Love. As a big fan of the Beatles, I can’t wait to see how the show combines the music into the different acts. Also I plan on sampling some delicious food! We are going to one of Gordon Ramsey’s restaurants, but I don’t know where else to eat. There are so many restaurants in Las Vegas, I don’t even know where to start.
I am ready to be home though for a couple weeks after my girls trip to get back into my routine. I am definitely a creature of habit and while I love traveling, I miss the comforts of home. Especially cooking my own meals and meal planning! It sounds weird, but I like knowing what I am going to eat for the whole week.
Ingredients
- 9 eggs
- 1 cup water
- 1 1/2 Tbls paleo mayo
- 1/2 Tbls stone-ground mustard
- 1 Tbls Kalamala olives, minced
- 1 Tbls fresh dill, minced
- 1 1/2 Tbls paleo mayo
- 1/2 Tbls stone-ground mustard
- 1 Tbls pimentos
- 1 tsp nutritional yeast
- 1/8 tsp sea salt
- 1 1/2 Tbls paleo mayo
- 1/2 Tbls stone-ground mustard
- 1 Tbls cilantro, minced
- 1/2 tsp curry powder
- 1/8 tsp sea salt
- 1/8 tsp black pepper
Directions
- Pour water into Instant Pot and put in wire trivet.
- Place eggs onto wire rack then place lid on.
- Make sure vent is sealed
- Press manual then set the time to 5 minutes.
- After the time is done, move the nozzle to vent and do a quick release.
- Once all pressure is released, remove eggs from Instant Pot and place into a large bowl with ice and cold water.
- Peel eggs and cut in half.
- Place 3 whole yolks into 3 separate bowls. Add ingredients for the 3 different deviled egg into each of the 3 molds.
- Mash ingredients together and fill 6 egg halves with each of the 3 different flavors.
