Raw Orange-Cranberry Relish

Raw Orange-Cranberry Relish | Plaid and Paleo
It is Thanksgiving time!! Aka one of my most favorite times of the year!! Growing up my entire family gathered at my grandparent’s farm in the middle of nowhere Kansas. As we got older and the grandchildren started having children, our Thanksgiving meal count started to teeter toward the 30s! Making a meal for 30 people is no easy task. It takes weeks of preparation and figuring out everything that can be make ahead of time! This Paleo Raw Orange-Cranberry Relish is one of my favorite make-ahead Thanksgiving dishes. It stays fresh in the fridge for a week and also freezes well for up to a month. This Vegan Raw Orange-Cranberry Relish combines just 4 simple ingredients for a sweet, tart and perfectly balanced side dish!

This year I won’t be making the trek back to the farm, but instead hosting 3 guys for what is sure to be an interesting Thanksgiving! I am trying to determine what sides to cut. Since I am only cooking for 4, I am not sure it is reasonable to make 8 side dishes. This is my favorite meal of the year though, so I anytime I consider cutting a dish I try to reason why I should still make it. I have a feeling, we are going to be dealing with lots and lots of leftovers! Oh well. I am down to eat Thanksgiving dinner for a few days in a row! Right now I have narrowed down my side dishes to mashed potatoes, brussels sprouts, green bean casserole and of course this Raw Orange-Cranberry Relish. On the maybe list is my grain-free traditional stuffing, sweet potato casserole and creamed corn (yes I know this isn’t paleo). Ugh. Too many choice!! Thankfully I have about another week to decide!

Raw Orange-Cranberry Relish | Plaid and Paleo

Raw Orange-Cranberry Relish

Ingredients

  • 16 oz fresh cranberries
  • 1 navel orange, cut into slices
  • 1 Fiji, Gala or Pink Lady apple, cored and chopped
  • 1/2 cup dates

Directions

  1. Place all ingredients in blender or food processor and mix until well combined!
  2. You might have to scrap down the sides a bit to make sure everything is mixed together!
