It is getting hot, hot, hot in Arizona! This past weekend, we hit record temperatures of more than 110 degrees! Despite the heat, I fired up the grill with these Paleo Chile Pineapple Shrimp Kabobs. I love how the sweet pineapple mixes with savory shrimp and spicy glaze to create these Chile Pineapple Shrimp Kabobs. Grilling pineapple gives it an almost caramelized flavor that is naturally sweet without any added sugar. I am pretty sure I will be grilling up pineapple and many more goodies all summer long! I already have a ton of recipe ideas that all revolve around grilling. From steaks to chicken to fruit, grilling is my absolute favorite method of cooking in the summer!
It felt good to get back into the kitchen and cook after my big move. I am still only about 90% unpacked but it is mainly just decorations left to put up and to organize. Doing normal things everyday things like cooking almost makes me forget I like in another state! Well until I look out my window and see mountains! These aren’t the beautiful Colorado Rockies, but they are still mountains and I love it. There definitely was not mountains like this in Oklahoma. Or so many cactuses. I am enjoying exploring my new city and checking out all the local restaurants and things to do. There are so many amazing places within driving distance that I can’t wait to take weekend trips too. Up to wine country and the Grand Canyon, down to Mexico or even west to San Diego. The possibilities seem endless, and I can’t wait to start traveling.

Ingredients
- 1 lb large shrimp, peeled and deveined
- 2 cups sliced pineapple, cut into 1/2 inch pieces
- 1 cup pineapple juice
- 2 tbls white wine vinegar
- 2 tsp minced garlic
- 1 tbls serrano chilis, minced
Directions
- Soak wooden skewers in water for 10 minutes.
- Alternate shrimp and pineapple on skewers.
- Cook skewers over medium-high heat for 3 minutes, flip and cook for another 3 minutes.
- Mix all ingredients together in a small sauce pot.
- Bring mixture to a boil and cook for 20-25 minutes, stirring occasionally.
- Spread sauce over shrimp and pineapple kabobs and enjoy!
