Sweet n’ Salty Sesame Almonds

Sesame Almonds | Plaid and Paleo

I have been missing Europe desperately lately. I still chat with the friends I met on my trip from over a year ago. We like to reminisce about long bus rides, eating new foods and simply the ridiculous scenarios we found ourselves in. The highlight of the trip for me was Greece. With the current crisis at a breaking point, I feel like I went at the perfect time. I dreamed about Greece for years before taking the leap across the pond and venturing across all of Europe before finally arriving on the shores of Greece.

One of the standout places for me in Greece was Oia, Santoria. Oia is known for it’s world famous sunsets and white buildings built into the cliffside. While walking the winding streets of Oia, an older Greek woman was passing out Sesame Almonds. These little bites were the perfect mix of salty and sweet. I knew almost immediately that I needed to recreate these sesame almonds when I got home. These sesame almonds are the perfect grab and go snack! Greece has absolutely amazing food, and it has wedged a place in my heart. From gyros to tzatziki to fried zucchini, every bite of Greek food seemed better than the last. I hope to return to Greece someday because I am pretty sure I left a little piece of me there.

Sweet n' Salty Sesame Almonds | Plaid and Paleo

Paleo Sesame Almonds

Ingredients

  • 2 cups raw almonds
  • 1/4 cup honey
  • 1 tsp vanilla extract
  • 2 tbls coconut sugar
  • 1 tsp sea salt
  • 1/4 cup + 3 tbls sesame seeds, divided

Directions

  1. Heat oven to 325 degrees.
  2. Line baking sheet with parchment paper or a silicon mat.
  3. In a small sauce pan over low-heat, melt honey and vanilla extract.
  4. Once combined, remove from heat, add in almonds and stir until almonds are completely covered.
  5. Mix in coconut sugar and salt.
  6. Lastly add 1/4 cup sesame seeds, and stir until well combined.
  7. Pour onto lined baking sheet and spread into a thin layer.
  8. Sprinkle remaining 3 tablespoons of sesame seeds on top of almonds.
  9. Bake for 15 minutes.
  10. Let cool completely then break apart and enjoy!
  11. Keep in an airtight container on the counter for 3-5 days.

    These are delicious. I learned to not substitute foil for parchment paper. Spent a little while peeling the foil off the almonds.

      Oh no! Sometimes foil works and sometimes there just isn’t a replacement for parchment paper.
