When Kelly’s book Paleo Eats landed on my doorstep, I was immediately drawn to the easy recipes and beautiful pictures. From pizza crust to chicken enchiladas casserole to banana cream pie, Kelly’s book is filled with delicious and simple recipe for paleo beginners to those fully committed to the lifestyle. It was so hard to pick just one recipe to cook. I initially wanted to make her Southern Fried Chicken, which looks amazing! Then I stumbled across this sweet bread recipe. The bread contains only 6 ingredients and is made in the blender! To say I am intimidated by Paleo baking is the understatement of the year. The main reason I shy away from paleo treats is because I am not a great baker. I used to be, but for some reason after I went paleo all my baking skills vanished.
Kelly’s Sweet Bread is so easy to make. It even gave me a chance to use up some of my canned apple butter! The sweet flavor of the bread paired perfect with the paleo blackberry jam that my mom made me this summer. I will definitely be keeping this sweet bread recipe in my rotation. Ingredients
- 1/3 cup melted coconut oil, plus extra for greasing the pan
- 5 large eggs
- ½ cup coconut flour
- ½ teaspoon vanilla extract
- ½ cup apple butter
- ½ teaspoon baking soda
Directions
- Preheat the oven to 350 degrees. Grease a 5 by 9-inch loaf pan.
- Place all of the ingredients in a blender and mix until thoroughly combined, roughly 1 minute.
- Pour into the prepared pan and bake for 20 to 25 minutes or until a toothpick inserted in the center comes out clean.
- Remove from the oven and cool in the pan for 15 minutes before cutting.
- Store leftovers in the fridge in an airtight container for 2 to 3 days or you can freeze and defrost as needed.
Notes
Tip: Make sure your eggs are at room temperature. If your eggs are too cold, then it will cause your coconut oil to solidify. My bread took closer to 25 minutes then the 20.
