In Europe drinking instant coffee isn’t as crime against humanity. From Paris through Italy and Greece, you couldn’t find a cafe that didn’t offer a frappe. At first I thought it was simply a frappacino until I finally came across a description. I was shocked to find out it was a blended instant coffee drink. I’m a black coffee type of girl. I might fancy it up sometimes with a little coconut milk or even throw some butter in it. As a semi-self proclaimed coffee snob, I couldn’t imagine paying to drink instant coffee. Now I say I’m a coffee snob but really I will drink the worlds worst coffee and not complain; however, I love a good coffee.
As the temperatures started to heat up, the ice cold frappes started looking pretty good. Hot coffee on a hot day isn’t always so fun. You see where this story is going. In Greece I finally caved to the frappe. You can order it sweet or plain with milk or none. I tried a plain with milk and was hooked. I would have never believed it was instant coffee! When I went to recreate this recipe I had a ton of mint from my garden and thought what sounds better than mint chocolate?! You can add more coconut sugar or leave it out completely depending on your coffee preference. You can also substitute 3/4 cup strong brew coffee for the cold water and instant coffee if you just can’t bring yourself to try instant coffee!
Ingredients
- 3/4 cup cold water
- 1 tbls instant coffee
- 10 mint leaves
- 2 tbls coconut cream
- 1 tbls raw cacao powder
- 1 tbls coconut sugar
- 2 cup ice, divided
Directions
- Add all ingredients except one cup of ice to a blender and mix until smooth.
- Pour over remaining cup of ice in a tall glass.
