I had the pleasure of meeting Dave and Karen from Paleo-on-the-Go at Paleo FX. They are so nice and not to mention run an amazing service. When I was at my old job, this was a typical day for me. Wake up a 7:15am. Get ready and make breakfast. Out the door by 7:45. Arrive at work at 8am. Eat my lunch at my desk at 1pm. Work until 7:30pm. Rush to make my 8:15 hot yoga class. Arrive home at 9:30pm. Shower. Prepare to make dinner at 9:45pm. Determine I was exhausted and eat roasted cauliflower or an apple. Pass out. Repeat.
Before I learned how to meal plan and make tons of food on the weekend, I did this exact process every day for the first month on paleo. For many people, it simply feels like there is no time to cook. I felt that way. I felt overwhelmed when I first went paleo. I wanted to eat healthy so bad, but my schedule was wreaking havoc on my determination. I wish I’d known about Paleo-on-the-Go then! Dave’s service is simply amazing!
Now even though I have more time, I still will come home from a day of running errands and realize I have nothing in my fridge. As a minor panic sets in and thoughts of gorging myself on almond butter, I remembered I had a meal in my freezer. No joke. This happened twice! In my haste, I decided on the microwave option even though they suggest heating it up in the oven. I was hungry, and I wanted the food right then. I first tried the butternut squash lasagna with cashew cheese. As I dug in, I couldn’t believe how much it tasted like a recipe I have on my blog. However that lasagna takes awhile to cook, and here I am devouring something so similar that took minutes to heat up. I was so impressed! I’m not going to lie. I was a little skeptical. As a recovering lean cuisine lover, I’ve steered clear of any type of frozen meal since going paleo. These are not your typical freezer meal.
I also tried the chicken chile relleno with salsa verde. Delicious! Finally I tried the leek and sweet potato soup. This time I heated it up in a little boiling water, which worked perfectly. I loved this soup. It kind of tasted like a yellow curry without the curry, which is amazing if you are following AIP and can’t have curry! Next time I would pair this with a little cauli-rice to truly bring back me back to one of my favorite Thai dishes.
